Widzę, że się ostro przygotowujesz przed wyprawą.
Tak jak rozumiem co zacytowaeś, jak nie obnizysz temperatury to
najpewniej rozgotujesz osłonke zanim ugotujesz wkład. A osłonki
chińskich "dumplingsach" potrafią być bardzo cienkie, więc pewnie jest
optymalny czas, temperatura (profil) tego gotowania. Porównaj - niektóre
rzczy się podsmaża przed dalszym gotowaniem, tu dajesz kopa aby się
wstępnie zcieło, a dalej już w łagodniejszych warunkach dogotowujesz
środek.
A tak z innej beczki, nie żebym był jakimś ekspertem od chińskich
dumplingsów ale wszystkie co jadłem były zawsze robione na parze co
zdaje się ogranicza ww. problem:
