Capretto con Uova e Cacio, Kid (or lamb) with Eggs & Cheese

4 pounds leg of kid or lamb
2 ounces lard (this should be the seasoned variety available
in Italian delicatessens)
1/2 cup + 2 tablespoons butter
1 tablespoon olive oil
1 medium-sized onion
1 cup dry white wine
3/4 pound freshly shelled peas
3 eggs, hard boiled
1 1/4 cups grated Parmigiano
1 bunch parsley
1/2 lemon
Salt & Pepper to taste

Wash, dry, and cut the meat into 2-inch pieces. Set it in a
roasting pan and dot it with lard and butter, sprinkle it with
oil, and brown it in a hot oven. Remove the meat to a platter,
slice the onion finely, and cook it, covered and over a very low
flame, in the pan drippings. It should cook for at least an
hour, and you should, if it begins to dry out, sprinkle it with
water. When the onion is soft and lightly browned, transfer half
of it and some of the drippings to another pot. Cook the peas in
this pot, covered and over a very low flame, adding some
boiling water after 10 minutes. Return the pieces of meat to the
first pan and finish cooking it over a low flame; sprinkle half
the wine over it, let it evaporate, and sprinkle the other half
as well; finish cooking the meat stirring it occasionally and
adding just the water necessary to keep things from sticking if
need be. In the meantime mince the hard-boiled eggs and parsley
with salt to taste, and combine this mixture with the grated
Parmigiano. When it is done add the peas, cook for a couple
minutes more while stirring gently, then add the egg and cheese
mixture and cook a minute or two more. Turn off the flame, sprinkle
with a few drops of lemon juice, and serve; in all it will
require about an hour's cooking time. Artichokes and baby potatoes
will be the perfect accompaniment.

POTATO CASSEROLE
8 medium potatoes
4 Tbsp. butter
1 1/2 cup sour cream
3 green onions
1 bay leaf
4 slices bacon cooked crisp and crumbled
1 can cream of chicken soup
1/4 tsp. salt
3 cup Cheddar cheese
Put unpeeled potatoes in water with bay leaf. Boil until
barely tender. Cool, peel and coarsely grate. Put butter into soup;
add sour cream. Stir until smooth. Stir in green onions, 2 cups
grated cheese and salt. Pour over potatoes and stir gently.
Pour into buttered pan. Bake uncovered at 350 degrees for 30
minutes. Sprinkle top with remaining cheese and bake an additional
10 minutes. Garnish with bacon.

TWICE BAKED POTATO CASSEROLE
8 to 12 servings mashed potatoes
1 cup sour cream
1 cup shredded Cheddar cheese
6 slices bacon, cooked and crumbled
1/4 cup sliced green onions
Spread potatoes in greased shallow casserole dish. Top with
sour cream, cheese, bacon and onions. Casserole may be covered and
refrigerated up to 24 hours, if desired. Bake uncovered in 350
degrees oven for 30 minutes or until hot.

FRESNO POTATO CASSEROLE
2 1/2 to 3 lb. medium size thin-skinned potatoes
4 slices bacon, fried and crumbled
4 green onions, chopped
1/2 cup milk
1 cup sour cream
1 cup shredded Cheddar cheese
salt and pepper
3/4 cup seasoned croutons, slightly crushed
3 Tbsp. melted butter
Boil potatoes just until tender. Drain well. Cool. Peel and cut
into 1/4-inch slices. In greased, shallow two quart casserole,
arrange half of the potato slices. Top with half of the bacon
and onion. Stir milk into sour cream; spread half the mixture
over onion, then half the cheese. Season with salt and pepper.
Repeat layers. Sprinkle with croutons and drizzle butter over
all. Bake in 350 degrees oven for 30 minutes or until hot throughout.

Dzieki ogromne,
szczerze mowiac to nie wiem dokladnie, mam tylko nazwe i tyle szczegolow
co podalam. Choc jesli o opis chodzi to bardziej pasuje Casserole :)
Pytanie czy ktos sie pomylil podajac mi taka nazwe, czy moze nie wie do
konca co to jest...
