Temat: ciasteczka imbirowe - poszukujeWitam,
mam straszne mdlosci i podobno pomaga na to jedzenie ciasteczek
imbirowych... szukalam troszke i znalazlam przepis Magdaleny, ale tam jest
czekolada... a mnie od niej strasznie odrzuca i zle ja toleruje, inne
przepisy maja jajka - a tych jesc nie powinnam. Moze ktos sie pmodzielic
przepisem na ciasteczka imbirowe bez czekolady i jajek?

circa 1885, Mrs. Mary Stuart Smiths Virginia Cookery Book
Two Quarts of Flour, one Teacupfull of Sugar, one Pint of Molasses,
half a Pound of Lard, four Tablespoonsful of ground Ginger, one
Tablespoonful of ground Cloves, and one Teaspoonful of Salt. let any
one try this Recipe who wants to be convinced that the best Things
are not always the most expensive. The Dough must be just as stiff as
it can be to handle well, and rolled out to Wafer-like Thickness.
Stick as you do Biscuits, and bake quickly without burning. Cut out
also with a plain round Biscuit Cutter.
SOFT GINGER CAKES
origin unknown, 1937 Market Square Tavern Kitchen,
Cream together on Cup Sugar, one half Cup of Lard. Add one Cup black
Molasses. Dissolve one Teaspoon Soda in one Cup sour Milk. Add
enough Flour to make Batter stiff. Sift with Flour, one Teaspoon
ground Ginger, one Teaspoon Cinnamon. Drop from Spoon. Bake in
moderate Oven on greased Tins.
DUTCH GINGERBREAD
circa 1739, E. Smith's Compleat Housewife, London
Take four Pounds of Flour, and mix with it two Ounces and half of
beaten Ginger, then rub in a quarter of a Pound of Butter, and add to
it two Ounces of Caraway-feeds, two Ounces of Orange-peel dry'd and
rubb'd to Powder, a few Coriander-seeds, bruised, two Eggs, then mix
all up in a stiff Paste with two Pounds and a quarter of Treacle;
beat it very well with a Rolling-pin, and make it up into thirty Cakes;
put in a candied Citron; prick them with a Fork; butter Papers three
couple, one white, and two brown; wash them over with the White of an
Egg; put 'em into an Oven not too hot for three quarters of an Hour.
(you could also use candied ginger in place of the candied citron--or
citrus peel. Oven temp would be about 325F, but might have to be
adjusted slightly.)
GINGERBREAD CAKES
circa 1787, John Farley's London Art of Cookery
from Brookbury, Chesterfield County
Take three Pounds of Flour, a Pound of Sugar, the same Quantity of
Butter rolled in very fine, two Ounces of Ginger beat fine, and a large
Nutmeg grated. Then take a Pound of Treacle, a quarter of Pint of
Cream, and make them warm together. Make up the Bread stiff, roll it
out, and make it up into thin Cakes. Cut them out with a Teacup or
small Glass or roll them round like Nuts, and bake them in a slack Oven
on tin Plates.

1 cup molasses(Brer Rabbit brand is best)
3 teaspoon baking soda
4 teaspoons ginger
2 teaspoons cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1 teaspoon salt
1 cup sour or buttermilk
(1 teaspoon vinegar in milk will sour it)
5 0r 6 cups flour
Cream shortening and sugar, add molasses, add soda,spices and milk. Add
enough flour to form a soft easy to handle dough. Roll on floured board.
Cut and place on greased pans. Bake at 400 degrees 8 to 10 minutes.
