POTATO CASSEROLE
8 medium potatoes
4 Tbsp. butter
1 1/2 cup sour cream
3 green onions
1 bay leaf
4 slices bacon cooked crisp and crumbled
1 can cream of chicken soup
1/4 tsp. salt
3 cup Cheddar cheese
Put unpeeled potatoes in water with bay leaf. Boil until
barely tender. Cool, peel and coarsely grate. Put butter into soup;
add sour cream. Stir until smooth. Stir in green onions, 2 cups
grated cheese and salt. Pour over potatoes and stir gently.
Pour into buttered pan. Bake uncovered at 350 degrees for 30
minutes. Sprinkle top with remaining cheese and bake an additional
10 minutes. Garnish with bacon.
TWICE BAKED POTATO CASSEROLE
8 to 12 servings mashed potatoes
1 cup sour cream
1 cup shredded Cheddar cheese
6 slices bacon, cooked and crumbled
1/4 cup sliced green onions
Spread potatoes in greased shallow casserole dish. Top with
sour cream, cheese, bacon and onions. Casserole may be covered and
refrigerated up to 24 hours, if desired. Bake uncovered in 350
degrees oven for 30 minutes or until hot.
FRESNO POTATO CASSEROLE
2 1/2 to 3 lb. medium size thin-skinned potatoes
4 slices bacon, fried and crumbled
4 green onions, chopped
1/2 cup milk
1 cup sour cream
1 cup shredded Cheddar cheese
salt and pepper
3/4 cup seasoned croutons, slightly crushed
3 Tbsp. melted butter
Boil potatoes just until tender. Drain well. Cool. Peel and cut
into 1/4-inch slices. In greased, shallow two quart casserole,
arrange half of the potato slices. Top with half of the bacon
and onion. Stir milk into sour cream; spread half the mixture
over onion, then half the cheese. Season with salt and pepper.
Repeat layers. Sprinkle with croutons and drizzle butter over
all. Bake in 350 degrees oven for 30 minutes or until hot throughout.
