Potato Knishes (from Epicurious)
For filling:
1 cup chopped onion
1/4 cup schmaltz
2 cups mashed or riced potatoes
1 egg, beaten well
1 tsp. salt
1/4 tsp. white pepper
For dough:
2 1/2 cups sifted flour
1 tsp. baking powder
1/2 tsp. salt
2 eggs
1/2 cup vegetable oil
2 tbsp. water
First, make filling. Saute onions in
schmaltz over medium high heat until tender
and golden-brown. Combine with remaining
filling ingredients. Set aside while making
dough.
Resift flour with baking powder. Add salt.
Make a well in the center of dry ingredients
and add eggs, oil and water. Mix with your
hands until blended; then knead on a lightly-
floured surface until smooth. Roll out
dough on a lightly-floured surface until as
thin as possible. Cut into 3" rounds.
Place a tablespoon of filling on center of
each round. Moisten edges of dough and pull
together, forming a ball and enclosing
filling completely. Pinch to seal. Place
pinched side down on an oiled baking sheet.
Bake at 350F until brown, c. 35 min.
Makes about 2 dozen knishes.
