Ginger is widely grown for its rhizomes, which have a distinctive scent and
taste. It is used in cooking, either green (fresh) or preserved and
crystallised and may be eaten as a delicacy. Plants in cultivation are sterile
cultivars, rarely forming seed. Growing to about 60cm high, ginger has cane-
like stems, long leaves and yellow-green flowers.
How to grow:
Fresh ginger roots can be bought from greengrocers or supermarkets. Cut large
roots into sections, making sure that each has some good buds or 'eyes'. Plant
in early spring just below the soil surface. Soil should be free draining and
heavily manured a few weeks before planting. Water sparingly until the new
growth is vigorous, then water thoroughly while it is growing. Plants can be
lifted and roots harvested in mid to late autumn. The time from planting to
maturity will vary with the district and conditions.
