The origin of the name egg liqueur is not very clear but is associated
with the colonial avocado pear. According to old Dutch texts from
the 17th century an avocado mouse mixed with alcohol producing
a yellow-coloured drink which at once took the fancy of the sailors
was prepared on the Dutch Antilles. In the absence of avocado
pears at home, they used egg yolk to imitate the colour.
